Hello,
I am Italian and my partner is french. Do we need visa if we want to stay 1month or maybe 45 days, considering that we cannot go to a consulate because we will arrive by train from south of China?

Dear Fio,
If you are coming with ITALIAN and FRENCH passport holder, you no need visa for staying 15 days. However, the previous visit must be far at least 30 days the next visit and your passport valid at least 6 months.
However, you want to stay more than 15 days so you can apply visa at this link https://www.vietnam-evisa.org/apply-visa.html
We can process maximum 3 months visa for both
The processing time takes 1-2 working days for tourist purpose and 3-4 working days for business one
