It is informed that Italian passport holders can have 15 days visa exemption if you don't enter Vietnam 30 days before and passport valid at least 6 months.

Therefore, if you have all conditions, you can enter Vietnam by using visa exemption. You should apply 1 month single entry tourist visa in advance https://www.vietnam-evisa.org/apply-visa.html and use it to come back Vietnam from Cambodia
