Dear John Gill,
Please note that UK passport can have 15 days visa exemption if you did not enter Vietnam for 30 days before, your passport valid for at least 6 months.
In case, you just stay in Vietnam for 2 days only, you no need to apply for a visa

Hi, We are travelling to Vietnam via cruise ship in April 2019 and the ship will call at Phu My, Da Nang and Hanoi stopping at each port for 1 day only. Will we need a visa for Vietnam? We will be travelling on Australian passports.

You need visa to enter Vietnam. The 1st entry will be Phu My port (Ho Chi Minh city), correct? If yes, please go to the Vietnam Embassy to apply visa to enter Vietnam by cruise
