Hi!
Me and two friends will be traveling through Vietnam for about 10 days. We will be flying between a few different cities but always staying in Vietnam throughout the duration of the trip. Would that still be considered a one entry visa?

That's correct. As long as you are not flying to other countries and back, single visa is good in this case.
