I'M Italian and I will stay in Vietnam for only 12 days, I know I don't need a Visa. Do I need a return flight ticket? Cause I was planning on leaving Vietnam via land, by taking a bus to Cambodia, would a bus ticket be enough proof that I am leaving the country or do I need anything else?

We would like to confirm you that according to the Vietnam Immigration's new policy, from July 1, 2015 to June 30th 2018, UK, France, Spain, German, Italy and Belarus no need Visa if they stay in Vietnam less than 15 days.
For your case, You can choose a suitable departure for your itinerary without documents
