Single entry or multiple

I am travelling to Vietnam in Jun 2019 and staying for around 5 days, then we are travelling to Siem Reap (Camboya) and Thailand for 15 days, then back to Vietnam (Hanoi) just for 1 day to take our flight back to United States. What kind of visa do we need? What are the visa requirements needed to do this.

The service fee is 12 USD/ pax (not including stamping fee (50 USD/ pax) at airport) And it takes 1-2 working days for normal processing to get approval letter.

We have originally purchased a one entry Visa for a 30 day period. Now we discover
we may need to purchase a multiple entry Visa. How can we make the correction from
single entry into multiple entry the easiest way possible???
