Hi,
I am visiting Vietnam for about 2 weeks in two months time. I am still unsure where will I be entering the country from, as we are travelling south east asia it looks likely that we will not be entering through an airport. What does this mean for the visa application?

You can apply evisa at our website wich can enter 28 ports (airport, landing port and seaport). LINK https://www.vietnam-evisa.org/apply-e-visa.html
Please noted that it takes 3 working days to process evisa and you have to enter Vietnam base on the arrival port that you puted in the application.
