Hello,
If we wanted to travel to Ho Chi Minh City for two days, do we need a visa?

We would like to confirm that you you need to get visa even if you just travel Vietnam for 2 days. By the way, now US citizen only can get 1 year multiple entry visa due to the new Regulation from The Vietnamese Immigration Department, from Aug 25th 2016. So the service fee will cost 35USD/person for this type of visa and the stamping fee is 135USD/person which you have to pay in cash at Vietnam airport to get your visa.
