We are flying into Ho Chi Minh then onto Siem Reap, Cambodia then board a cruise down the Mekong River back to Ho Chi Minh. Would we need a single entry visa one multi entry visa?

The 1st entry: you just transit, correct? If yes, please check with the airline if they ask you to get visa. If you need, you have to apply for multiple entry visa
