Hello,
Me and my parents will be arriving to Vietnam on December 15th. On December 20th we will go to Philippines. On December 25th we will return to Vietnam. On December 30th we will fly back to the U.S. what kind of visa should we get? If we got a multi entry visa with an entry date of December 10th would that cover us through January 10th? Also is it ok for the visa to start December 10th but for us to actually arrive December 15th?

Based on your itinerary, you will need multiple entries visa and if you put your arrival date as Dec/10, your visa will be valid until Jan/10. And yes, you can apply with arrival date as Dec/10 and enter Vietnam on Dec/15 without any problems
