Do you have to have the exact entry date, or can it be a range. I'm thinking what happens if you give an exact date, and because of either time change or flight delays you come in later then the date you put on the letter?

Kindly note that your visa will be valid from the arrival date which put in the applicaiton form
You can use the approval letter to enter VIETNAM on or after within valid period visa
The processing tourist visa takes 1-2 working days only so you can apply visa once you already have flight ticket
