We are a family of 5 visiting Vietnam in march/April this year, we are spending 8 days in Vietnam then flying to Cambodia for 3 days before returning to Vietnam for another 7 days. Do we need E visas for this

Thanks for your question!
On the 1st entry: UK passport holders do not need visa if staying in Vietnam within 15 days. However, the previous visit must be far from the next one at least 30 days. In addition, the passport must be valid at least 6 months
For the 2nd entry: you need visa to reenter and can apply E-visa at this link: https://www.vietnam-evisa.org/apply-e-visa.html
