As a citizen of the United States am I required to purchase 3 month multi entry visa or can I just buy 30 day single entry? I plan on visiting for 7 days in late January.

We would like to confirm that you can apply 1 month single visa for 7 days in Vietnam in January. The fee for 1 month single tourist visa is 19USD/person. This fee is just visa service to process visa approval letter for you. When you arrive in Vietnam airport, you have to pay 25USD/person in cash for stamping fee to get your visa.
To apply visa, you just need to fill in the application form online here https://www.vietnam-evisa.org/apply-visa.html . After receiving your payment, we will send you the Visa approval letter within 2 working days. You just need to print it out for boarding the plane. Then, you use this letter to get Visa stamp in the airport when you enter Vietnam.
