Can I pay in Baht (Thai) since I do not have dollars with me since I am coming from Thailand? Also I want to apply for the 90 day visa, single entry. How much does it cost? I am sure it is cheaper than the multiple entry 90 day visa.

The service fee for 3 months single tourist visa is $29US/person (stamping fee in cash upon arrival: $25US/person). Please apply visa at this link: https://www.vietnam-evisa.org/apply-visa.html
You can pay stamping fee in Baht but the exchange rate at the airport will be very high so you should prepare USD
