We are British Citizens travelling to Vietnam in October/November 2017, arriving in Ho Chi Min City on October 29, then four days later travelling into Cambodia and Laos before returning to Vietnam (Ha Long Bay) from 15 to 18 November. Do I need a multiple entry visa for this, and can I apply for it online?

In your case, you should apply for multiple entry visa. With this visa, you can leave and come back Vietnam many times within the time your visa is valid. Then you just need to print this letter to board the plane and get visa stamped at Vietnam airport.
