Hallo,
my question is:
I am German, my husband is Dutch. We are flying to Vietnam (Amsterdam/transit China/destination Hanoi and back from Ho-Chi-Min/transit China/Amsterdam).
What kind of Visa do we need e.g. is a transit Visum China needed?

Firstly, as you are holding a Germany passport, then you no need to get a Visa to enter and exit from Vietnam,
Regards to your husband circumstance, as he is a Dutch citizen, he need to get a Visa firstly with the international Flight which arrive in Hanoi, then he can continue to take his trip with Flight domestic from Hanoi to Hochiminh to go to China then Amsterdam.
